Cinnamon Puffs

I've been unable to really post like I wanted to due to the free internet being out! Grr Haha  So, here is a new recipe I've made recently:

Cinnamon Puffs
2  8oz pkg Cream Cheese
1 c. Sugar
2 Egg yolks
2 loaves of white bread, crust removed
2-3 sticks melted butter
cinnamon/sugar mixture

Blend cream cheese, sugar, and egg yolks.  Spread over bread.  Roll bread jelly-roll style. Gingerly dip into melted butter, roll around in cinnamon/sugar mixture until coated.  Freeze for a few hours.  Cut into 1/3's. Bake at 400 degrees for 10 minutes.

I like to freeze these overnight and bake them in the morning for a delicious breakfast.  I brought them in to work this morning for our breakfast 'pig-in' and it was such a hit!  It's creamy and, surprisingly, not too sweet.  It just melts in your mouth.  :)  This really does make 2 loaves worth and it's a LOT so if you don't want a huge batch, consider halving the recipe.

Rolled, ready for butter and cinnamon/sugar
Ready to Freeze
Ready to eat! :)
