Some new changes are going around. I'll get to that in a bit, but first some new recipes I've tried out.
Last week, I made sweet potato biscuits for the first time from a recipe I have. They were really good! Even the raw dough was good. ;) Haha, what can I say, I'm a taster! These biscuits made my apartment smell so yummy. Here's the recipe for the sweet potato biscuits from "Harvest Recipes."
2 c. all-purpose flour
2/3 c. sugar
2 T. baking powder
1 1/2 t. salt
1/2 c. shortening
2 c. sweet potatoes, cooked peeled, & mashed
1/4 c. buttermilk
Sift flour, sugar, baking powder and salt together; cut in shortening. Mix in potatoes & buttermilk; turn out onto a lightly floured board. Knead lightly; roll out 1/2-inch thick. Cut with a biscuit cutter; arrange on greased baking sheets. Bake at 475 degrees for 12-15 minutes.

I also made my first ever apple pie yesterday morning for co-workers. It was super easy. The only time-consuming part of it at all was coring/peeling/thinly slicing the apples. Let me tell you, that took forever! I have a corer and I have a peeler, the thinly slicing part was such a pain! It inspired me to consider buying the Apple 3-in-1 Peeler/Slicer/Corer. Amazing. Anyway, so my results for my pie? Seriously, I think it's the best thing I've EVER made. It was simple to make, but so good. The co-workers enjoyed it as well. Honestly, it wouldn't have mattered if they didn't like it, only because I enjoyed it so much!! :) Here's the recipe from "Harvest Recipes."
6 Granny Smith apples, cored, peeled, & thinly sliced
3 T. lemon juice
1/2 c. brown sugar, packed
1/2 c. plus 1 T. sugar, divided
2 t. cinnamon
1/4 t. nutmeg
3 T. all-purpose flour
1/4 c. butter, chilled & diced
9 caramels, unwrapped & quartered
2 9-inch pie crusts
Combine apples, lemon juice, brown sugar, 1/2 c. sugar, cinnamon, nutmeg, flour, butter, & caramels. Stir until mixture evenly coats apples. Line a 9" pie plate with one pie crust; spoon filling into the crust. Cover with second crust; flute edges and vent as desired. Sprinkle remaining sugar over crust. Place on an aluminum foil-covered baking sheet. Bake at 375 degrees for 30 minutes; reduce heat to 350 degrees and bake an additional 20 minutes or until crust is golden.
