I made these delicious pancakes yesterday morning from my "Harvest Recipes" book. They were super easy to make and did add an "autumn" :) flair to my cool, crisp morning. Here's the recipe:
1/2 c. quick-cooking oats, uncooked
1-1/2 c. boiling water
1-1/2 c. all-purpose flour
2 t. baking powder
1/8 t. salt
3 T. sugar
1/2 t. cinnamon
1 egg, beaten
1 c. milk
1 apple, cored, peeled & coarsely chopped
1/4 c. chopped walnuts (I omitted this ingredient)
3 T. butter, melted
Place oats in a small bowl. Pour boiling water over oats and let stand 5 minutes; set aside. Combine flour, baking powder, salt, sugar, and cinnamon in a large bowl. Add oat mixture, egg, milk, apple, nuts, and melted butter; mix well. Pour batter by 1/4 cupfuls into lightly greased skillet.
